Banana Base
- 3 medium sized ripe bananas
- 1 cup oat flour or blended oats
- ¼ cup almond flour or blended almonds
- ½ tsp vanilla extract
- ½ tsp baking powder
- ¼ tsp fine salt
Caramel Layer
- ½ cup Medjoul dates pitted and soaked
- 2 tbsp almond butter
- 2 tbsp maple syrup
- 1 tbsp coconut oil
- 1 tsp white miso
Chocolate Layer
- ½ cup vegan dark chocolate chips
- 1 tsp coconut oil
Banana Base
Preheat your oven to 350 °F. Line a loaf pan with parchment paper.
Mash the bananas in a large bowl. Add oat flour, almond flour, baking powder, salt and vanilla extract. Mix until a thick batter forms.
Spread the mixture evenly into the lined loaf pan and bake for 25-30 minutes, or until firm and slightly golden on top. Let cool completely.
Caramel Layer
In a food processor, blend soaked dates, almond butter, maple syrup, coconut oil and miso paste until smooth.
Spread the caramel layer evenly over the cooled banana base.
Chocolate Layer
Melt the chocolate chips with coconut oil in a double boiler or microwave until smooth.
Pour over the caramel layer, spreading evenly.
