Ingredients
  

Banana Base

  • 3 medium sized ripe bananas
  • 1 cup oat flour or blended oats
  • ¼ cup almond flour or blended almonds
  • ½ tsp vanilla extract
  • ½ tsp baking powder
  • ¼ tsp fine salt

Caramel Layer

  • ½ cup Medjoul dates pitted and soaked
  • 2 tbsp almond butter
  • 2 tbsp maple syrup
  • 1 tbsp coconut oil
  • 1 tsp white miso

Chocolate Layer

  • ½ cup vegan dark chocolate chips
  • 1 tsp coconut oil

Instructions
 

Banana Base

  • Preheat your oven to 350 °F. Line a loaf pan with parchment paper.
  • Mash the bananas in a large bowl. Add oat flour, almond flour, baking powder, salt and vanilla extract. Mix until a thick batter forms.
  • Spread the mixture evenly into the lined loaf pan and bake for 25-30 minutes, or until firm and slightly golden on top. Let cool completely.

Caramel Layer

  • In a food processor, blend soaked dates, almond butter, maple syrup, coconut oil and miso paste until smooth.
  • Spread the caramel layer evenly over the cooled banana base.

Chocolate Layer

  • Melt the chocolate chips with coconut oil in a double boiler or microwave until smooth.
  • Pour over the caramel layer, spreading evenly.

Final Steps

  • Place the pan in the fridge for at least 1 hour to set.
  • Cut into bars or squares and enjoy!
