1cuppowdered sugar120 g
2-3tbspfresh lemon or orange juiceor plant-based milk for a neutral flavor

Instructions
Preheat the oven: Set the oven to 350℉ (175℃). Grease and line a large gingerbread man-shaped pan or a standard 9-inch pan.
Mix dry ingredients: In a large bowl, whisk together the flour, baking soda, baking powder, spices, and salt.
Combine wet ingredients: In a separate bowl, whisk together vegan butter, brown sugar, molasses, plant-based milk, vanilla, and apple cider vinegar until smooth.
Combine wet and dry: Pour the wet mixture into the dry ingredients and stir until just combined. Avoid overmixing.
Bake: Pour the batter into the prepared pan and spread evenly. Bake for 30-35 minutes or until a toothpick inserted in the center or thickest part comes out clean.
Cool: Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
