  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tbsp ground ginger
  • 2 tsp ground cinnamon
  • ½ tsp nutmeg
  • ¼ tsp ground cloves or allspice
  • ¼ tsp salt

Wet Ingredients

  • ½ cup vegan butter or coconut oil, melted 120 mL
  • ¾ cup brown sugar 150 g
  • ½ cup molasses 120 mL
  • 1 cup plant-based milk 240 mL
  • 1 tsp vanilla extract
  • 1 tbsp apple cider vinegar or lemon juice

Citrus Icing

  • 1 cup powdered sugar 120 g
  • 2-3 tbsp fresh lemon or orange juice or plant-based milk for a neutral flavor
  • ½ tsp vanilla extract

Instructions
 

  • Preheat the oven: Set the oven to 350℉ (175℃). Grease and line a large gingerbread man-shaped pan or a standard 9-inch pan.
  • Mix dry ingredients: In a large bowl, whisk together the flour, baking soda, baking powder, spices, and salt.
  • Combine wet ingredients: In a separate bowl, whisk together vegan butter, brown sugar, molasses, plant-based milk, vanilla, and apple cider vinegar until smooth.
  • Combine wet and dry: Pour the wet mixture into the dry ingredients and stir until just combined. Avoid overmixing.
  • Bake: Pour the batter into the prepared pan and spread evenly. Bake for 30-35 minutes or until a toothpick inserted in the center or thickest part comes out clean.
  • Cool: Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  • Decorate: Mix powdered sugar, lemon/orange juice (or plant-based milk, to make a glaze. It should be thick but creamy. Pipe on details like eyes, buttons, and a smile to resemble a gingerbread man.
