- ½ cup molasses 120 mL
- 1 cup plant-based milk 240 mL
- 1 tsp vanilla extract
- 1 tbsp apple cider vinegar or lemon juice
Citrus Icing
- 1 cup powdered sugar 120 g
- 2-3 tbsp fresh lemon or orange juice or plant-based milk for a neutral flavor
- ½ tsp vanilla extract
Instructions
- Preheat the oven: Set the oven to 350℉ (175℃). Grease and line a large gingerbread man-shaped pan or a standard 9-inch pan.
- Mix dry ingredients: In a large bowl, whisk together the flour, baking soda, baking powder, spices, and salt.
- Combine wet ingredients: In a separate bowl, whisk together vegan butter, brown sugar, molasses, plant-based milk, vanilla, and apple cider vinegar until smooth.
