Apple Pancakes

These delightful rings of apple goodness are lightly coated in batter, pan-fried to golden perfection, and finished with a dusting of powdered sugar.

Ingredients
  

  • 2 large apples (Granny Smith or similar firm variety)
  • 1 cup all-purpose flour
  • 1 tbsp cornstarch (or arrowroot powder)
  • 1 tbsp sugar
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • ¼ tsp nutmeg (optional)
  • Pinch of salt
  • ½ cup + 2 tbsp plant-based milk
  • 1 tbsp apple cider vinegar or lemon juice
  • 1 tsp vanilla extract
  • Neutral oil or vegan butter for frying

Instructions
 

  • Prepare the apples: Peel and core the apples. Slice them into ¼-inch thick rings.

  • Make the batter: In a bowl, whisk together the flour, cornstarch, sugar, baking powder, cinnamon, nutmeg, and salt.

  • In another bowl, mix the plant-based milk, apple cider vinegar, and vanilla extract.
    ½ cup + 2 tbsp plant-based milk, 1 tbsp apple cider vinegar or lemon juice, 1 tsp vanilla extract
  • Gradually pour the wet ingredients into the dry ingredients, whisking until smooth. The batter should be thick enough to coat the apple rings but not too runny.
  • Cook the apple rings: Heat a non-stick pan or griddle over medium heat and lightly grease it with a small amount of oil or vegan butter.
  • Dip each apple ring in the batter, coating it well, and place it directly onto the pan. Cook for 2-3 minutes on each side until golden brown and cooked through.
  • Serve: Dust with powdered sugar or drizzle with maple syrup. You can also sprinkle extra cinnamon on top for more flavor.
