Prepare the apples: Peel and core the apples. Slice them into ¼-inch thick rings.

Make the batter: In a bowl, whisk together the flour, cornstarch, sugar, baking powder, cinnamon, nutmeg, and salt.

In another bowl, mix the plant-based milk, apple cider vinegar, and vanilla extract.

Gradually pour the wet ingredients into the dry ingredients, whisking until smooth. The batter should be thick enough to coat the apple rings but not too runny.
Cook the apple rings: Heat a non-stick pan or griddle over medium heat and lightly grease it with a small amount of oil or vegan butter.
Dip each apple ring in the batter, coating it well, and place it directly onto the pan. Cook for 2-3 minutes on each side until golden brown and cooked through.
Serve: Dust with powdered sugar or drizzle with maple syrup. You can also sprinkle extra cinnamon on top for more flavor.
