  • 2 tsp baking powder
  • ½ tsp baking soda

  • 1 tbsp sugar
  • Pinch of salt

  • ¾ cup brewed chai (tea) cooled to room temperature
  • cup plant-based yogurt (plain or vanilla)
  • 1 tsp vanilla extract
  • 1 tsp apple cider vinegar or lemon juice

For Topping

  • Soy yogurt (or any other plant-based yogurt of choice)
  • Chai spiced syrup (or maple syrup)
  • Chopped nuts (e.g. pecans, walnuts or almonds)
  • Fresh fruit (e.g. sliced apple or banana, berries)

Chai Spiced Syrup

  • ½ cup maple syrup
  • ½ tsp ground cinnamon
  • ¼ tsp ground cardamom
  • Pinch of ground ginger

Instructions
 

  • Make the chai (tea): Brew a strong cup of chai and let it cool to room temperature. (You can use a tea bag or your own blend of black tea and chai spices.)
  • Mix the dry ingredients: In a large bowl, whisk together the flour, baking powder, baking soda, cinnamon, ginger, cardamom, cloves, nutmeg, sugar, and salt.

  • Combine the wet ingredients: In a separate bowl, mix the cooled chai (tea), yogurt, vanilla extract, and apple cider vinegar.
