Pumpkin spice latte is the ultimate cozy-season treat if you ask me. The rich flavors of espresso with the warm spices, the creamy texture and the hint of pumpkin sweetness make every sip feel like a hug in a cup. Combine all those things with oats and you have the fall breakfast of your dreams!

PSL Overnight Oats

If pumpkin spice latte was a food, then this is it! These overnight oats are thick, creamy and tastes just like pumpkin spice latte. An easy and delicious breakfast for those busy days. And all other days when you are craving something cozy to eat.

Total Time 4 hours 5 minutes
Servings 2 glass jars

Ingredients
  

  • 1 cup rolled oats
  • 1 cup non-dairy milk oat barista makes it more creamy
  • ½ cup pumpkin puree see notes
  • 1 espressoshot or ¼ cup black coffee
  • 1 tbsp chia seeds
  • 1 tbsp pumpkin spice syrup or maple
  • 1 tsp pumpkin pie spice
  • Pinch of salt
  • Non-dairy yogurt to serve optional
  • Pecans or granola to serve optional

Instructions
 

  • In a medium bowl, mix together all of the ingredients until well combined.
  • Cover and place in the fridge for at least 4 hours or overnight.
  • Stir and divide into 2 glasses/glass jars or 1 bowl.
  • Top with non-dairy plain yogurt, pecans or granola and a sprinkle of cinnamon.

Notes

You can use storebought pumpkin puree (not filling) or make your own by steaming cubed pumpkin and blending it.
